'Ginger - Across the Street'

I recently moved back into the house I grew up in, way up Bodfish Canyon Road. While the house and neighborhood feel the same, there is one slight change. My neighbor who lives across the street. My wife informed me she had met her, and she seemed like a nice lady; she even said SOMETHING about the Cook's Corner. “Cool,” I thought. Then came the bundle of hand written recipes in my mailbox, all signed 'Ginger – Across the Street'. A perfect addition to my perfect neighborhood. Thanks for the recipes 'Ginger – Across the Street', I look forward to receiving more, and maybe one day enjoying what I'm sure is your wonderful cooking.

PINEAPPLE TEA

3 cans (12oz) Unsweetened Pineapple Juice – concentrate thawed

1½ C Lemon Juice

1 C Sugar

12 C Iced Tea

Mix juice concentrate, lemon juice and sugar into a large pitcher until sugar is dissolved. Stir in tea and store covered in the refrigerator.

MOM'S CHOCOLATE

COVERED CHERRIES

1 can (14 oz) Sweetened Condensed Milk

2 C (12 oz) Chocolate Chips – semi sweet

½ (or more) C Candied Cherries – chopped

Almonds

Line a 8x8x2 pan with foil. Set aside. In a medium microwavable bowl, combine milk and chips. Microwave 1 ½ to 2 minutes on high until they are melted and smooth when stirred. Stir in cherries. Almonds can be added at this point, but are optional. Put in pan, cover, and chill till firm. Cut into 1 inch squares and store covered in refrigerator.

GREAT MASHED POTATOES

3½ C Chicken Broth

5 large Potatoes – cut into 1” pieces

½ C Light Cream

½ C Sour Cream

¼ C Fresh Chives – chopped

2 Tbs Butter

3 slices Bacon – cooked and crumbled, reserve some for garnish

Black Pepper – to taste

Heat the broth and potatoes in a 3 quart saucepan over medium high heat, to a boil. Reduce heat to medium. Cover and cook for 10 minutes or until potatoes are tender. Drain, reserving the broth. Mash the potatoes with ¼ cup broth, light cream, sour cream, chives, butter, bacon and black pepper. Add additional broth if needed until desired consistency. Garnish with remaining bacon.

OVEN FRIED PICNIC CHICKEN

2/3 C Buttermilk

8 Boneless Skinless Chicken Breast

1 C Corn Flakes Cereal

1 C All Purpose Flour

2 pkg (12 oz) Ranch Dressing Mix – dry

Cooking Spray

Heat oven to 400°F. Spray cooking sheet with cooking spray. Pour buttermilk into shallow glass or plastic bowl. Add chicken, turn to coat, let stand 5 minutes. Meanwhile, in a 2 quart resealable food storage bag crush cereal with a rolling pin, add flour and dressing mix to cereal in bag. Remove chicken from buttermilk. Add chicken to cereal mixture. Seal bag, shake to coat. Place chicken on cookie sheet. Spray with oil, bake 45 to 50 minutes.

HAMBURGER SOUP

1 lb Ground Beef

½ Onion

1 or 2 Celery – chopped

1 Carrot

1 can Tomatoes - diced

6-8 C Beef Broth

1 Tbs Oregano

1 C Macaroni

Cook beef, onion, celery, and carrot until hamburger is done. Add can of diced tomatoes, beef broth, oregano. After it boils for 5 minutes add macaroni, cook until macaroni is done.
